Overview

Unsaturated fat is a class of dietary fats that are typically liquid at room temperature and found largely in plant-derived oils and certain animal sources. Unlike saturated fat, unsaturated fats contain one or more carbon–carbon double bonds in their hydrocarbon chains, which affects their shape, melting point, and biological behavior. Chemical structure and properties

At the molecular level an unsaturated fat is a triglyceride composed of glycerol esterified with fatty acids whose molecules include double bonds. These double bonds occur between carbon atoms and mean the chain is not fully saturated with hydrogen. The presence, number and position of these double bonds change the physical properties: single double bonds introduce a kink in the chain and reduce packing, making fats more likely to be liquid at ambient temperature.

Types of unsaturated fats

Unsaturated fatty acids are usually divided into two main categories. Monounsaturated fats contain a single carbon–carbon double bond; see monounsaturated. Polyunsaturated fats have two or more double bonds; see polyunsaturated. Each type includes many individual fatty acids—examples include oleic acid (a common monounsaturate) and linoleic or arachidonic acids (polyunsaturates).

Metabolism and energy value

In cellular metabolism, unsaturated fats are oxidized to produce energy and metabolic intermediates. Unsaturated fats are used in cooking, food processing, and as sources of essential fatty acids. Certain polyunsaturated fats (omega-3 and omega-6 families) are essential nutrients because the body cannot synthesize them. Nutritional guidelines often recommend replacing some saturated fat with unsaturated fat for cardiovascular health, though specific recommendations vary by population and individual risk. Industrial processing can hydrogenate unsaturated oils to increase solidity; partial hydrogenation can produce trans fats, which have different and generally unfavorable health effects.
