True oysters have a laterally compressed body enclosed by two shells (valves). A notable anatomical feature is the central adductor muscle, which leaves a visible scar in the middle of the interior shell where the muscle attaches. Ostreids are usually sessile: individuals cement one valve to rock, shell or other firm surfaces, creating an irregular external shape determined by the substrate and neighboring oysters (attachment to substrate).
Biology and development
Like other bivalves, oysters are filter feeders, drawing plankton-rich water across their gills. They typically have a free-swimming larval stage that settles and metamorphoses onto a hard surface. Ostreidae includes several genera and species of commercial and ecological importance; identification often relies on shell morphology, muscle scars, and habitat.
