Iodized salt

Table salt fortified with small amounts of iodine compounds to prevent iodine deficiency and related thyroid disorders; a low-cost public health measure used worldwide.

Iodized salt is ordinary table salt that has been supplemented with a minute amount of an iodine-containing compound to supply dietary iodine. The addition supplies an essential micronutrient that many people require in small quantities to support normal thyroid function and to prevent a range of disorders associated with insufficient intake.

Most table salt is the chemical compound sodium chloride. To make it iodized, manufacturers mix in tiny amounts of an iodine source such as potassium iodide, potassium iodate or, less commonly, sodium iodide. These additives deliver iodide or iodate ions that the body can use. The amount added is calibrated so the salt looks, tastes, and behaves like ordinary salt while providing close to the recommended daily iodine intake.

Iodized salt emerged as a deliberate public health response in the early 20th century after researchers linked low environmental iodine to enlargement of the thyroid (goitre) and other health problems. Widespread fortification dramatically reduced the prevalence of iodine deficiency disorders, a group of conditions that include goitre, hypothyroidism and developmental impairments in children when pregnant women lack sufficient iodine. Because only a small amount of iodine is needed daily—roughly on the order of a few hundred micrograms for adults—fortifying a commonly consumed food such as salt is an efficient delivery strategy (iodine deficiency disorders).

Uses, benefits, and examples

Iodized salt is used in households and, in many countries, in commercial food production to help ensure adequate population-level intake. It is a low-cost and broadly accepted intervention that has been credited with reducing endemic goitre and improving child development where iodine had been deficient. Natural sources of iodine include seafood, dairy products and some plants grown in iodine-rich soil, but in regions where the soil is poor in iodine, local food crops may not supply enough, making iodized salt especially important.

Limitations and safety considerations

While iodized salt prevents the majority of iodine-deficiency cases, it is not a universal solution. Many specialty salts (for example some sea salts and gourmet salts) are sold without added iodine, and processed foods may or may not use iodized salt. Excessive iodine can cause thyroid dysfunction in susceptible individuals, so fortification programs aim for safe, modest levels rather than large additions. Pregnant and breastfeeding women typically need more iodine than other adults and are often targeted in public health advice.

Practical and regulatory notes

Countries vary in whether iodization is mandatory or voluntary and in the preferred iodizing compound. Labels and public guidance indicate whether a product is iodized. For storage and household use, iodized salt should be kept dry and sealed to preserve its iodine content; the chemical form used (iodide versus iodate) affects how long the added iodine remains available. The practice remains one of the most cost-effective nutrition policies for preventing a preventable deficiency and its health consequences.
