Overview

The Bellini is a sparkling long drink cocktail made from sparkling wine and peach purée or nectar. It is associated with Venetian aperitivo culture and is often enjoyed at celebrations, brunches, and as a light, fruity aperitif. Traditionally the sparkling component is Prosecco, although other dry sparkling wines are sometimes used.

Ingredients and preparation

Typical Bellini ingredients are chilled Prosecco and fresh peach purée (or good-quality canned or bottled peach nectar when fresh fruit is unavailable). A common mixing approach is to spoon a measure of purée into a chilled flute and gently top with chilled sparkling wine to preserve effervescence. Ratios vary by taste, but many recipes call for about one part purée to two parts sparkling wine. The drink is served immediately and usually ungarnished.

History and name

The cocktail was developed in late 1940s Venice by Giuseppe Cipriani at Harry's Bar. Cipriani reportedly named it after the 15th-century Venetian painter Giovanni Bellini because the drink's pale pink hue reminded him of colors in Bellini's paintings. The original recipe used seasonal white peaches from the Veneto region when available.

Variations

  • Frozen Bellini: blended with ice for a slushy texture.
  • Fruit variations: substituting raspberries, strawberries or mango for peach to create different flavored cocktails.
  • Champagne Bellini: made with Champagne or other sparkling wines in place of Prosecco.
  • Spirit-forward versions: adding a splash of peach liqueur for extra sweetness and alcohol.

Context and distinctions

The Bellini is often compared with the Mimosa, which mixes sparkling wine with orange juice; the Bellini is sweeter and fruitier because of the purée. In Italy it is a recognizable classic that highlights seasonal stone fruit; internationally it has become a staple of brunch and festive menus. For best results use ripe peaches or high-quality nectar and keep all components well chilled.
