Magnesium sulfate (MgSO4), commonly known as Epsom salt, is an inorganic salt used in medicine, agriculture, industry and brewing. It occurs in hydrated and anhydrous forms with varied applications and safety considerations.

The familiar household material called Epsom salt is the heptahydrate form (MgSO4·7H2O). In nature it can occur as the mineral epsomite.

Because magnesium is a nutrient for yeast and sulfate affects flavor perception, small, controlled additions can tailor fermentation and final taste in beverage production. History and notable distinctions

The common name Epsom salt traces to natural springs at Epsom, England, where mineral-rich water was observed and used for bathing in the 17th century. Magnesium sulfate should not be confused with magnesium chloride or sodium sulfate; these salts have different solubilities, tastes, and applications. The mineral form epsomite is one naturally occurring manifestation of MgSO4.

Safety considerations include the potential for electrolyte disturbance if large amounts are ingested or administered intravenously.
