Invention and process

In the early 19th century Van Houten developed a mechanical method to press much of the fat (cocoa butter) out of roasted cacao nibs. Using a hydraulic press, this separation produced a drier, lighter cocoa cake that could be pulverized into a fine powder. That powder mixed more readily with liquids than previous preparations and reduced the cost and variability of chocolate products.
